Institutets store seminar sidste år, 'Alt, hvad du ville vide om Grenache', præsenterede forskning udført i fem år med produktion af vin 'i miniature' fra 25 plotter spredt rundt i de (for det meste sydlige) dele af dalen. Vinrankerne blev beskåret, grønhøstet, vinfremstillet og vurderet under så tæt laboratorieforhold som muligt. Rollen er at uddanne snarere end politiet, og med mere end 8.000 vinproducerende ejendomme, der producerer AC-vine i dalen, er det en enorm opgave.
